Mushrooms

If you're into harvesting wild mushrooms now is the time to be in the woods. Honey mushrooms are all over the oak forests with huge clusters at the base of oak trees. Went out yesterday in Waushara county and found all I want for the season in a short period of time.

Bob,

What do you do with them when you get a bunch?  Freeze them or something?  I have those all over the place (340 acre farm) and I've never done anything with them.

Hey Scott, I usually freeze them. I have dehydrated them also. I freeze them also after that process and reconstitute to use in soups or stew. Try to get the buttons which are the best. Caps that are up to 2 or 3 inches in diameter are also good. The rule is the bigger they are the less quality you will have. There are some good web sites out there about honey mushrooms that are Wisconsin based.

There is also a great book that my brothers have titled Mushrooming Without Fear that they got on Amazon for $9.00. Really informative and detailed.
